LBG is obtained from the endosperm of the seeds of the carob fruit (Ceratonia Siliqua), after a de-husking, de-germination and milling process. LBG is one of the most important hydrocolloids used in the food industry. Its specific qualities include: a high content of galactomannan; unique functional properties; and it is completely natural.
